Gluten Free Baking-Banana Bread

So, this morning, I slept in, and woke up at 7:30am. I did my usual Sunday morning things: Do dishes, prep waffles, cut up fresh fruit, make coffee, etc. This morning was different. I did all of the above, then I felt like making Gluten Free banana bread. I searched for my favorite recipe and got my ingredients together.

With gluten free baking, in addition to using gluten free all purpose flower, I also put a 1/4 tablespoon of xantham gum in with the flour to help it stay together. With gluten free baking, it can be quite tricky. When you use all-purpose flour, you have to add the xantham gum. Xantham gum does the same job as wheat or gluten, xantham gum is a binding agent. Another fact with gluten free baking, you use A LOT of butter. In my banana recipe alone, I used an entire stick of melted butter.

Once I got all the ingredients together, I decided to add a few more ingredients to my bread mix: semi-sweet chocolate chips, and walnuts. I baked the bread for about an hour, and it made the house smell amazing (this is one of my favorite reasons for making homemade bread. It makes the house smell great). The smell of the banana bread actually gained the attention of my boyfriend as he was waking up this morning, LOL.

When you're diagnosed with Celiac Disease, you are given a list of what food you cannot eat. Wheat, Barley, Rye, and Oats. However, you find that there is such a thing as gluten free oats.
